Got nothing in the cupboards? Try this simple recipe!
You know when you get to the end of the work day, you finally put on your comfy clothes and slippers and go to make dinner, only to find there’s nothing in the cupboards? You’ve been meaning to go food shopping for days, you just haven’t got round to it. And let’s be honest, who actually enjoys food shopping?
If this sounds familiar, we’ve got the perfect solution for you. Whilst you’re waiting for the shopping to come, or your partner to go and make the trip to Lidl, here’s a recipe you can pull together with whatever food you have got left in the kitchen. You can chop and change anything in this recipe to whatever you’ve got hanging around, so let’s get stuck in!
One pot broccoli pasta
What makes this recipe such a winner is that it’s super easy, you can make it with whatever you’ve got at home, it’s quick and it’s delicious. You’ll be adding this to your weekly meals for sure! It’s hearty, healthy, and you can make it all in one pot - so less washing up too! Oh, and there’s enough garlic to keep all those vampires away. What more could you want from a recipe?
Ingredients (serves 1)
75g wholewheat pasta (or any preferred pasta)
1 chopped onion
4 cloves garlic
1 tsp preferred oil
Half a head of broccoli
Veg stock (or any type of stock) - enough to cover the pasta and let cook
1 tsp chilli flakes
1 tsp smoked paprika (or normal)
3 tbsp parmesan or preferred cheese (can use nutritional yeast for vegan option!)
1 tbsp garlic powder
1 tbsp butter
1 tsp onion powder
Salt and pepper
Heat the oil in a pan over a medium-low heat. Add the garlic for a few minutes, then add the onion and chilli flakes. Fry until onions are translucent, then add your pasta. Stir and leave for a few moments before adding the stock. You want enough to cover the pasta and cook it. Mix everything together and then add your chopped broccoli. Bring to the boil and stir. Let cook for around 15 minutes. Add more veg stock or water if it soaks up too quickly.
Add your spices, nutritional yeast if using, butter and salt and pepper to taste. Mix and make sure everything is cooked through and liquid is absorbed. Serve with vegan or normal parmesan and fresh parsley.
